I hope these questions are answerable here. Those Krauser frames are interesting. Is the head tube one that allows adjustment of the head angle? I've seen head tubes that big on Ducatis that have adjustable steering angles.

In pictures of the complete bikes, it looks like the frames have a cradle that attaches to the original factory engine mounts. That must bolt up to the bottom of the frames as shown in the picture of them on the table. Right?

Not sure. The diameter of the steering tube may indicate that possibility,
but then we'd be guessing as to the nature of the stem bearings in that very "non-stock" fork ...
Mike Krauser used many contemporary BMW components on the MKM for a number of reasons ...
Dirk Scheffer's "Krauser inspired remake" had an additional 20+ years of techno-development to call upon
to improve and update those choices, and has taken full advantage.

The Red and Blue bikes, of course, use different frame designs.
The Red bike was designed and built (for a client, I will presume) as an "Isle of Man TT Racer".
You would be correct about detachable rails on the Krauser-type frame.
Not so sure about the Red bike, but it would be a safe bet considering engine height.

Just in case any of you are interested in owning a Krauser, I just happen to know someone who has a very, very nice one sitting in his den and it's for sale.

Not cheap but available!
